Roasted Red Pepper Chicken Bake

Are you looking for an easy and quick, yet healthy & uberly delicious meal for dinner time? Well, look no more, because this Roasted Red Pepper Chicken Bake is sure to please!

We'll be using the breast of the chicken for this recipe. I know what you're thinking: "dry and tasteless". But it doesn't have to be!

Chicken breast gets a bad rep for being desert dry, but it's all in the technique. And the accompanying red pepper sauce will add even more flavorful, juiciness to this dish!

Ready to get started? Great! Let's dive on in.


Roasted Red Pepper Chicken Bake

 

Ingredients

Chicken breast cutlets
1/4 cup EVOO (extra virgin olive oil)
Meat Tenderizer
Salt
Lemon Pepper
Sweet Basil (dried)
Original Mrs. Dash
Mushrooms, sliced

Roasted Red Pepper Sauce (from The Whole30, pg. 316)
1 jar (16oz) roasted red peppers, drained
1/4 cup EVOO
1/4 Onion
2 cloves Garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon caper, drained
Juice of half of a lemon
1/2 teaspoon salt
1/2 teaspoon black pepper


Cooking Instructions

Preheat oven at 350 degrees

On a baking sheet, brush EVOO on both sides of chicken breasts

Cover chicken in meat tenderizer (both sides)

Add all seasonings and then cook for 20-25 minutes

For your sauce, COMBINE all ingredients in a blender until well combined.

After 30 minutes, remove the chicken from the oven. Using a fork, check the inside of the thickest part of the chicken to make sure there is no pink color. You should still see some juice, but not any pink. If it's not cooked thoroughly, let it cook a little longer in the oven.

Add the sauce on top of the chicken, and then top off with the sliced mushroom.

Turn the oven off, place the chicken back in the oven, and allow the heat to infuse the sauce into the chicken.



I hope you enjoy this dish as much as I did! Quick Tip: the amount of time that it takes to cook the chicken will depend on how many pieces you place on the pan, as well as the thickness of the meat.
