"Cheesy" Paleo Stuffed Bell Peppers
Ok, so I'm so excited about this dish that I'm going to get right into it's recipe! It was inspired by my desire to make stuffed bell peppers, but I didn't just want to stuff it with meat. And since I love cheese, I had to find a paleo-compliant version of a
cheese blend! I found the cheese sauce recipe on a Buzzfeed video here and then tweaked it a bit to re-create that sharpness that a quality cheese would have. Ready to try this delicious "Cheesy" Paleo Stuffed Bell Peppers recipe?! Let's go...
1 Carrot
1/4 Yellow onion
1/2 Cup of Cashews
1 Tsp of Minced Garlic (Fresh or jarred)
1 Tsp of Salt
Juice from half of a lemon
1/4 Pound of ground beef
4 Bell peppers (any color of your choice)

Peel and cut up your potatoes to about an inch in length and size. Place potatoes in boiling water. Peel and slice your carrot; then add to pot. Cut 1/4 of onion into 4 large sections and also place in boiling water. Boil vegetables until they are tender soft.
While they are boiling, saute your ground beef in a pan. Using a spatula, break up the meat into small pieces. Season to taste with ©Slap Ya Mama seasoning. Let the meat cook about halfway and then turn the heat off.
In a blender, place the: cashews, boiled vegetables, minced garlic, salt, and about 1/2 cup of the boiled water. Blend. after the blend has turned into liquid, add the lemon juice and continue blending.
Preheat oven to 350 degrees
Once all ingredients are blended well, pour your "cheese" sauce into the pan with your ground beef and evenly combine.
Prepare your bell peppers by cutting off the hat (top portion) and removing the insides. Be careful not to cut through the walls of the pepper.
Now let's stuff! stuff! stuff! place the meat and cheese mixtures into the bell peppers. Place all peppers inside of a pan and position them so that they will stand up (this part may take a few tries! It's like putting a puzzle together!)
Once positioned, place pan in the oven and let it cook for about 30-35 minutes.
Top with a few chives and throw some sauteed spinach & mushroom on the side!
Dinner, lunch, or even breakfast is served!!
